Incy Wincy’s Recipe of the Month – August 2015
Our second recipe of the month was requested by Noah's mummy, the children at Incy Wincy's love to bake and small groups will often go into the kitchen to help make the pudding. We hope you will enjoy baking this together in your kitchens at home.
Carrot Cake with Creme Fraiche
125g Soft Brown Sugar
125ml Sunflower Oil
2 egg
75g grated carrot
30g raisins
I orange
125g Self Raising Flour
1/2 tsp Bicarbonate of Soda
1/2 tsp ground cinnamon
1/2 tsp ground nutmeg

Mix – the sugar and oil to form a paste
Beat – the egg
Grate & Juice – the orange
Add – the egg, grated carrot, raisins and orange juice to the paste and mix
Combine – mix the dry ingredients into the wet mixture and combine, ensuring there are no lumps
Pour - into the lined baking tray and bake for 20-25 minutes on Gas Mark 7 / 190C or until a skewer comes out clean.
Cool - leave your cake to cool
While your cake is cooking mix some grated orange zest with the creme fraiche and chill until serving. When your cake is cool cut into slices and serve with a spoonful of your orange creme fraiche. Alternativeley you could have the cake with yoghurt or ice cream.
Finally - make yourself a cup of tea & try a piece of cake!
