Recipe of the Month – November 2015
Slow Cooked Moroccan Lamb Stew
(Serves 4-6)
- 400 g diced lean lamb
- 200 g chick peas
- 2 onions, diced
- 4 cloves garlic, crushed
- 2 red peppers, sliced
- 1 tsp thyme
- 1 tbsp Tomato Puree
- Lamb or Beef Stock
- 2 tbsp Coriander
- 300 g New Potatoes
- 1 tbsp Curry Powder
- Method:
- Into a large saucepan add a little olive oil and heat gently
- Fry the diced onion, curry powder, garlic, thyme, peppers and diced lamb until browned off, then add the tomato puree and top up with the stock
Wash the chick peas and add to the ingredients in the saucepan
Half your new potatoes and add to the stew
Cook on a very low heat for around 4 hours or to make things easier you can cook this in a slow cooker all day so it is ready when you get home.
